      The surprise of a fallen wine is a terrible beginning for a meal. It provides a short term conversation piece, but there is no getting around the sour fact that money, time and anticipation have all been wasted on vinegar. This didn't have to happen.

   Wine has needs. A bottle of wine has one point of entry which is blocked with a good cork. The cork protects the wine from spilling out and from letting in air. Too much oxygen in contact with wine speeds the aging process uncontrollably and destroys it. The cork should work unless it gets too dry and brittle. Without proper humidity the cork's defense can crumble.

   Heat and cold are even more dangerous to the wine because they don't need to penetrate the cork. Temperature effects wine right through the bottle. Via the process of conduction, wine can be cooked or frozen, neither of which is desirable. In fact, any fluctuations in temperature are detrimental to your wine. Direct light and vibrations are also thought to be harmful. Wine prefers undisturbed rest in a constant environment to age properly.

   When you replay the nightmare over and over, thinking "What if I had done things differently?" you might conclude that it is, in fact, your fault and that steps need to be taken to insure that it doesn't happen again. The following are possible solutions: Only buy new wine and drink immediately; buy properly cellared wine from reputable sources and pay top dollar; build your own expensive wine cellar and try to follow all the directions exactly; and last but not least, store your wine in a wine storage facility. All of these options have pros and cons, so one must review them and decide which factors are most important.

   If you decide that you need properly cellared wine then join the club. Join our club. If you have lots and lots of money and very little patience, then maybe you should buy wine from other sources. If you would like to do it yourself and build your own collection of prized wines and sentimental trophies, then buy yourself a cellar. If you don't have the space, energy, money or patience to build or have one built for you in your home, then you really do need to join our club.
